INGREDIENTS

• 1 lb pork boudin sausage, casing removed

• 1 cup Panko breadcrumbs

• 2 large eggs, beaten

• ½ cup all-purpose flour

• 2 Tbsp Cajun seasoning (for breadcrumbs)

• Vegetable oil for deep frying

• Creole remoulade for dipping

• Creole mustard (optional)

• Sliced green onions to garnish

METHOD

1. Remove boudin from casings; crumble into bowl.

2. Form into 1.5-inch balls with damp hands. Chill 30 min — mandatory!

3. Set up: seasoned flour → egg → spiced Panko.

4. Coat each ball: flour, egg, breadcrumbs. Press to adhere.

5. Heat oil to 350°F in a heavy Dutch oven.

6. Fry in batches 3–4 min until deep golden. Don't crowd!

7. Drain on paper towels. Serve immediately with remoulade.

Chilling the balls before frying is absolutely critical — it keeps them intact and gives you that perfect even golden crust!

He released her hand and pressed his over his heart. “You wound me, madame.” Beau shook his head. “I would think my quiver of arrows and the bow would have given it away.”

She chuckled. “They are quite impressive. How about those tights? Should I assume anything about your sexuality?”

His hand remaining on his chest, Beau shook his head. “Again, you wound me, madame. I assure you I’m more attracted to Maid Marian than Friar Tuck.”

Miss Anderson chuckled. “For what it’s worth, the tights look good on you.”

He dipped his head. “I’ll take that as a compliment.”

“As you should.” She glanced around the room. “Now, if you’ll excuse me, I’m working.”
